My son went fishing & brought home a bunch of blue gill...anyone have any good recipes for fish? I usually just do the old standard flour & fry, but I would love to try something a little different. Thanks so much:)

Here's a "different" coating you might try sometime. All I have used this on is Walleye, because that's the only kind of fish we eat.
I take a few eggs and beat them up good, and add a little milk. (I never measure ANYTHING, so you just gotta figure that one out on your own!) I salt and pepper the fish, dip it in the egg, then roll it in flour 'til it's coated all the way. Shake off excess flour, dip in the egg mixture again, then roll in bread crumbs (I grind them up really fine in the food processer)
(Not the fish...the bread crumbs!!!).
Then fry them however you want to, in a skillet or deep fry. Sometimes I add some spices to the breadcrumbs, depending on what I am serving with the fish.
Personally, I like my fish the best when it's just sauteed in butter with a little salt and pepper on it.

Thanks Cindy...I will try that, it sounds really good. My son is a fishing freak...he brings home more bass & bluegill than I know what to do with. I am about to start composting it. I told him to practice some catch & release habits out there on the lake cuz mom's freezer isn't big enough to hold it all:)

Hi Chrissy,
I'm new here. Just wandering around and saw your post. I hate fish, but the he hub loves it and cooks it all the time. He has recipes out the wazoo. I don't know if they'd work with bluegill... he uses other kinds, but I'll have him come check this out and see if he has any recipes for you. He amazes me with the things he fixes! I'll have him here ASAP! smile

I prepare fish a lot by putting it on a piece of foil, spray it with some spray butter, season with garlic salt, lemon peper or seasoning salt, slice a few onion in there, wrap it up, throw it on the grill and you have a moist, tender fish in a very short time (approx 20 minutes depending on the heat of the grill). You can also toss it in the oven on a cookie sheet. Green peppers, mushrooms and whatever else can be added in with the fish also.
