I brought the peppermint in last week and this week it is blooming. I've never had a flower spike on my peppermint before so I'm really thrilled. I suppose I should pinch it off to promote growth right?

Yes you should cut or pinch it off, esp since you have it indoors.

There is something quietly beautiful in flowering herbs and peppermint expecially. Just the softest shade of blue so delicate and light ....I hope you celebrated your clipping atop a scoop of vanilla ice cream.
