I know this was an old-ish posting...but I have been off for awhile...I have a special spot in my heart (and stomach) for portabello mushrooms. They are the king of mushrooms. They are the steak of vegetarians.
My FAVORITE way to cook them is like you would serve an eggplant parmesean... soften the mushroom by sauteeing it (whole) in olive oil on a nonstick pan. Add crushed garlic to the oil if you like...and season with salt
pepper and oregano. Then once they are softened up a bit add a tomato sauce of choice. You can put the mushroom and sauce into the oven, covering with mozzerella and parmesean cheese, til cheese is melted and lightly golden. mmmmmmmmmm
