Anyone have a really good recipe besides the one that Chrissy posted? That one sounds really good, but I'm looking for other ones for my recipe box too. I have 2 mushrooms in the refrigerator just waiting to be cooked!

I have one more portabello recipe if you are interested in it. It is another vegetarian recipe:)

Portobello Burger

Ingredients:

1 medium-size onion, minced
2 shallots, minced
1/8 tsp. salt
1 cup dry Portobello mushrooms
2 cups steamed, fresh Portobello mushrooms
12 oz. extra-firm tofu
1/3 cup toasted wheat germ
1/3 cup bread crumbs
3/4 cup quick-cooking oats
2 Tbs. light tamari or soy sauce
2 Tbs. Worcestershire sauce
1 tsp. liquid smoke
1/2 tsp. granulated garlic

Preparation:

Preheat oven to 375 degrees. Lightly coat a heavy skillet with cooking spray and sauté onion, shallots and salt in olive oil for about five minutes. Steam softened dry mushrooms and mince with fresh mushrooms in a food processor. Add to onions and cook another 10 minutes, stirring occasionally to prevent sticking.

Mix mushrooms with mashed tofu and add remaining ingredients. Mix well. Measure eight 1/2-cup portions. Wet hands with water to prevent sticking and form into patties. Place them side by side on a cookie sheet coated with cooking oil spray. Bake for 25 minutes, turning after 15 minutes.

Before serving the burgers, heat them in a heavy skillet coated with cooking spray and grill a few minutes on each side.

I know this was an old-ish posting...but I have been off for awhile...I have a special spot in my heart (and stomach) for portabello mushrooms. They are the king of mushrooms. They are the steak of vegetarians.
My FAVORITE way to cook them is like you would serve an eggplant parmesean... soften the mushroom by sauteeing it (whole) in olive oil on a nonstick pan. Add crushed garlic to the oil if you like...and season with salt pepper and oregano. Then once they are softened up a bit add a tomato sauce of choice. You can put the mushroom and sauce into the oven, covering with mozzerella and parmesean cheese, til cheese is melted and lightly golden. mmmmmmmmmm

Portabello mushrooms are very yummy as a sandwich.

-Wash the mushrooms and score the tops with a knife.
-Marinate in a mixture of soy sauce and citrus juice (I have used orange juice, pinnapple juice, passionfruit juice). The scoring allows the mushrooms to soak up more of the marinade.
-Bake for a few minutes at 350 degrees or so. (Until the mushroom is soft and smells yummy.)
-Serve on toasted bread with mayonaise and any toppings you desire.

Ok, now you all have me craving Mushrooms, Hmmmm, wonder if there will be any Morels when the sun comes out...Yummy!
