I took an offset from a large Fatsia in my garden and planted it in a seperate pot. However, when i looked at the top of the stem i noticed it was hollow, and that there were a few grubs/caterpillars inside, eating away at it. I cut this part off but all i'm left with now is one leaf.

Will the cut-back stem heal? I was thinking of covering it in wax...

How do i encourage more leaves to grow?

You may cover the cut with something but it looks to be callusing over on it's own. You should see more leaves forming from the leaf buds below the cut soon.
Fatsia grow easily from cuttings with a little time. Make sure to watch for more pests and deal with them quickly.
