Hey everyone thought I would start a topic called "Recipes for One"?These would be of course recipes for only one person,since some people including myself are home more often by myself cause my hubby is on the road quite a bit.You hate to cook a big meal but then on the other hand you enjoy the big meal what can you make just for one?

My husband works a lot of overtime, and my kids often go to grandma's or friends homes for the night, so I find myself eating alone many evenings. I do a lot of stuffed baked potatoes when it is just me. I especially like a large baked potato stuffed with cubed barbqued chicken & brocolli & cheese. I use my left-overs for the stuffing...so all I really have to cook is the potato. You can stuff them with anything. I have used left over hamburger helper, left over veggies...I even make pizza taters. Put a little pepperoni & pizza or spaghetti sauce in the potato & smother with cheese. Very easy.

And yes Cindy...ramen noodles count as a meal in my book lol laugh

does anyone subscribe to Taste of Home magazine?? In every issue they have two full pages of recipes for one or two people. I use those ALOT!!! Its a GREAT magazine. They have great recipes for whatever season or holiday is coming up and I always try to keep the issues in a pile so that I can flip through them if we're having a picnic or a massive get-together (which we do at least 3 times a year). In the newest issue they have the following recipes:
Chicken with Lemone Sauce
Pea Pods with Onion
Coffe Cream Tortilla Cups
Ole' Omelet
Summer Squash Casserole

Every issue also has 8 pages of "clip and keep" recipes and every single page has recipes for you. There are some articles in the mag, but those almost always have recipes in them too!!!

Hey! Chrissy good idea about the potatoe..I love them but never thought of stuffing them why I didn't think of that is beyone me but thank you for the ideas.

For a thing to do with the Ramen Noodles,
I take the package for Chicken.......
Cook it up with only like an inch of water,
so it's "juicy" but NOT like soup....
put in the chicken seasonings, and
then while it's still hot I add Chez~Whiz!!!
(A couple of tablespoons or so? Up to your tastes)

It makes like a Macaroni and Cheese with a zip!!!
And it's fun!!!

Hey Weezie, we had left over chili tonight for dinner & my daughter won't eat it because it is so hot...so I tried the zippy ramen noodles for her & she LOVED them:) Thank you!

O.K. I'm going to part with my most awesome chicken recipe, which takes just a few minutes to make. You won't believe this is so good until you try it.
I buy chicken breasts (Boneless, skinless) in a big pack when they're on sale and go ahead and cut up the chicken how I want it before I put it the freezer. Some I may cube for stir-fry, some big chunks for a meal with mashed potatoes and salad, and some nice big flat pieces (I use a fillet knife and slice through the breast, "butterflying" here and there where I need to) ending up making a big flat (1/4 to 1/3 inch thick) bread-sized piece of chicken. Just throw these on a cookie sheet and stick in the freezer. When they're frozen, put them in a freezer bag. They're all separated and you can use just one at a time if that's what you want. Take one out and throw it in a bowl of warm water, and it's thawed in a few minutes.
O.K. Here's the good part, and this is my secret for making the most tender, juicy chicken you've ever eaten, so don't tell anyone .
Dump a little cornstarch into a bowl (just a heaping teaspoonful if you're just making one piece of chicken). Now stir in some soy sauce until you have it about the consistency of evaporated milk. Get the chicken totally covered with this, and fry it up in a skillet that you have waiting (no-stick cooking spray and just a little oil). This just takes a few minutes and it's done. You might want to add a little pepper here, but no salt. The soy sauce is usually salty enough. I add some sliced onions or sliced mushrooms to the skillet, too. When you take the chicken out, cover it with shredded cheese. Put it on some whole-wheat toast, buttered on the outside, add the onions and/or mushrooms, maybe a big slice of tomato, some mayo and you've got the best chicken sandwich you've ever tasted.
I do this same thing with the cubed chicken for stir-fry, throw it in the wok, when it's almost done add some broccoli, etc., etc. and serve it with rice or buttered noodles.

Cindy~That sounds great and a little like a chicken thing I make but I bake it. I bake the chicken with parmeasan cheese and galic salt sprinkled on the top. Then, I saute mushrooms, onions and tomatoes (if in season) and whatever else sounds good (brocolli, caluiflower, peppers...). After the chic bakes, I pull it out, top it with sauted veggies and mozzerella cheese. Nuke for a few seconds to melt the cheese and you have an easy, tasty meal. I made it for a group of friends about 4 years ago and a couple of them still talk about my chix. You can do this for 1 or 20 people! Another way that I make the boneless, skinless chix breast is to roll in egg and then in a mixture of crushed club crackers, garlic salt and parmeason cheese. Very easy and tasty. I sometimes have extra guys for lunch and will only have an hour notice so I always have the breasts in the freezer and lots of boxes of mac and cheese to do some quick lunches for them!

Here's what I'm doing tonight for myself---asparagus, canadian bacon & mushroom pizza. I mix 1/2 a batch of pizza dough, put on the toppings, bake and have the best pizza every. Hub won't touch it but that leaves more for me! That is another thing that I saw in a mag and went home to try er out.

My absolute FAVORITE meal for "one" is what I'm having tonight! (Just me and Lola here, so we're having our favorite!)

Open a can of tuna
Dump it on a paper plate
Add one handful (more or less to taste) of Ruffles potato chips.
Eat it!

Okay,
Here's my big Lunch special with tuna....

I purchased one of those (well actually 2) chopper/salad spinner's from the HSN, and I take for myself, part of an onion, chop that up with a few twirls of the handle, put in one can of the single serve Albacore White Tuna in water,
(I leave in the water/juice for my self),
And maybe 2 table spoons of Hellman's Mayo, cool
give it a bunch of twirls around again, and it's a tuna salad type mixture, and plop that on an oval plate, then either just a slice of tomato,
or some iceberg lettuce~cottage cheese~and sliced tomato on top, and there's my lunch...

For my husband, I get out the other one I bought and he likes a stalk of celery, and I chop that up, and then add a big can of the same type of tuna, and squeeze the juice/water out of his can for him, he doesn't like it left in.....
and for him 3 table spoons of Miracle Whip :p
and give it the ole twirl again....

Two different lunches but one great item to do it in, I love them things....
