Apple-Cinnamon Granola Bread

Makes 1 loaf

2-1 / 2 to 3 cups all-purpose flour
1-1 / 4 cups whole wheat flour
3 / 4 cup granola
2 tablespoons sugar
1 envelope FLEISCHMANN"S RapidRise Yeast
1 teaspoon salt
1 teaspoon ground cinnamon
1 / 2 cup water
1 / 2 cup milk
1 / 2 cup applesauce
2 tablespoons butter or margarine

In a large bowl, combine 1 cup all-purpose flour, whole wheat flour, granola, sugar, undissolved yeast, salt, and ground cinnamon. Heat water, milk, applesauce, and butter until very warm (120o to 130oF). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
Roll dough to 12 x 8-inch rectangle. Beginning at short end, roll up tightly as for jelly roll. Pinch seam and ends to seal. Place, seam side down, in greased 9 x 5-inch loaf pan. Cover; let rise in warm, draft-free place until doubled in size, about 45 minutes.

Bake at 375oF for 30 minutes or until done. Remove from pan; cool on wire rack.

I love the rapid rise yeast recipes. They are so much easier than the standard yeast bread recipes.

I don't think I've ever tried those..
After a few experiences when I was younger
with yeasts and rising stuff, I didn't further
my trying of that stuff..

But I love just about anything Apple~Cinnamin there is, and love that kind of granola too...

Penny there is a fleishmann's website that has a bunch of recipes for breadmakers. I would definitely check it out if I had a breadmaker. Someday I hope to have one.
