Dudley Family (Slow Cooker) Corned Beef and Cabbage · Recipe

Story
I'm not exactly sure where this originates in our family, but it's pretty darned good... It's my go to recipe when I'm in the mood for Corned Beef and Cabbage; plus it gives me yet another reason to break out our crock pot...


Ingredients
- 3-6 Large Carrots cut into small pieces (or 2-3 hand full's of Baby Carrots).
- 8-12 Baby Red potatoes cut into quarters.
- 1 Onion diced (bite sized pieces)
- 4 Cups of Water
- 6 Ounces of Beer (Guinness)
- ½ Head Cabbage chopped
- 1 Corned Beef Brisket with Spice Packet (3-5lb)


Directions
Place the carrots, potatoes, onions, in the slow cooker and add the water, then add the brisket on top of the vegetables. Slowly pour the beer over the brisket and then sprinkle the seasoning packet on top. Simply cover the crock pot and set your slow cooker on high.

After your slow cooker has been cooking for about 8 hours stir in your cabbage and cook for an additional hour to completion and enjoy!


Substitutions
A lot of people don't care for the taste of Guinness, it can imbue a sour taste in the cabbage of the end product; I've had some good luck with using Corona or Corona Lite as a substitute, and it doesn't come out half bad.
