You can try Jiffy, wish I could here in zone 4 cause Laura and I have been eating potatoes like CRAZY , to use up last years crop before they all sprout, as long as the spuds in question had no scab , they should grow, sometimes though; veggies bought in the market have been treated with a growth inhibitor to Retard growth, they may still sprout, but the vigor may be comprimised

You know Jiffy, I make my own french fries at home and this may sound funny, but I buy extra potatoes and get them so they soften up
(Not so rock hard)
and use them specifically for home made fries.
The softer ones just seem to turn out better,
brown up nicer and maybe even sweeter.......
(I only make my fries with Russets, I like the flavor and the #1. for bulk for the digestive system)
