Nutritional & Thrifty Recipies

Egg Salad Sandwiches

4 servings, 1 sandwich each

4 Eggs, hard boiled, shelled and chopped
2 Tbsp Light mayonnaise or Salad Dressing
2 tsp vinegar
1 tsp yellow mustard
salt and pepper to taste
8 slices Whole grain bread
4 leaves Lettuce, shredded

Combine first 5 ingredients. Divide mixture amoung 4 slices of bread; top with lettuce and remaining bread slices.

Egg Salad is one of my favorites...only when I make it I do anywhere from 6-12 eggs at a time.....and then I pig out on it for a few days.....LOL

I make it pretty much the same only I use some big spoonfuls of sweet relish instead of vinegar.

Sweet relish is a good addition to this recipe. But I would still add half of the vinegar for the contrast of sweet against sour. I think you'll like it.
