Anyone have recipes for Parsnips? Like a parsnip soup or something else??

I hear you can eat them just like pototos.
However here is how I do mine.

After washed and peeled
Slice them thinly......Boil till soft. Doesn't take very long....
Pour off the water and Put a frying pan on with melted margarine..
When nice an hot ......add Parsnips and fry till very golden on both sides..

We love them.

when i was in ireland, my cousin made them.

boiled them just like potatoes and then mashed them up and mixed them in with the mashed potatoes.

i like the idea of the pan-fry in butter though...actually sounds tasty!

you could probably even coat the cooked pieces with some spices before putting them in the pan to fry them up.

If I find parsnips at the market again this week, I will try the pan fried technique.

Last week I made fritters out of them...kind of like how you'd make latkes, but they didn't stick very well.....must not have been moist enough before I added the flour to it. Oh well.

Parsnips are like a white carrot but they have a very different flavour.These are good just cut up like carrots and boiled and tossed with butter and a bit of crushed rosemary.You can also shred them into shredded potatoes to make potatoe pancakes-delicious.Easy to grow in the garden unless you have a very clay-like soil.Nice to harvesst and have on hand for throwing into roaster with a roast beef in the winter too.

Jenn, I use parsnips ALL the time.... in any recipe I want other root vegetables, so in they go with my pot roast w/ potatoes, carrots, turnips, onions and mushrooms... in they go with my heavy stews, etc.
