Here is the recipe I mentioned in one of the posts on what to do with all your zucchini.

Zucchini Fritters

Vegetable Oil
1/2 cup milk
1 egg, slightly beaten
1 cup flour
1-1/2 tsp baking powder
1/2 of 1-oz package ranch style dip mix
2 cups shredded zucchini

Fill a deep fat fryer or skillet with oil to a 2 inch depth. Heat to 375 degrees. Meanwhile, combine milk and egg in a mixing bowl. Stir together dry ingredients and add to egg mixture; blend well. Fold in zucchini. Drop batter by spoon into hot oil. Fry until deep golden brown, turning once. Drain thoroughly on paper towels. Yield 1-1/2 - 2 dozen.

My family likes to eat these with syrup.

I use Parmigiano cheese in place of the Ranch Dressing, about 1/4 to 1/2 cup, depending on how "wet" your mixture is. It's delicious!!!

sounds great grinnnn I have zucs coming out of my ears .They get old eating the same old steamed ones all the time. I finally got my wife and daughter to try them so new recipes are always welcome.

Hey Joe, ever try sauteeing them with some onions and tomatoes in Olive Oil? Yummy!!!! Wonderful as a side dish or even in a sandwich with good crusty bread!!!!!!! thumbup

Rosepetal, I bought the ingredients for the fritters this morning, and am going to make the fritters this weekend.
I'll let you know how they turn out, but just from the ingredients I know I'm going to like them !
