Diane and I were discussing this the other night in the CH, and Merme had also expressed interest in the recipe, so here it is. It's really easy, and a great side dish!

Potato Kugel

6 medium potatoes (2 1/2 lbs.)
1 1/2 tsp. salt
2 eggs
1/4 cup matzoh meal
1/4 tsp. pepper (though my mom adds just a bit more)
1 large onion

Grate potatoes and onion - using a hand grater or food processor.
Add the remaining ingredients and mix well.
Pour into greased 1 1/2 qt. baking dish to bake at 375* for 1 hour or until crisp. Serves 6-8.

It's very easy and tastes great!
Now that we've been discussing it, I'll be getting more potatoes next trip to the store so we can have some here!

Enjoy!

thanks Lynne!

'hm, I might have to do some investigative shopping as I've not seen matzoh meal for sale up here, though I am familiar with it from down home.

It sounds so yummy!

And are you also going to post the other one with noodles and vanilla pudding?

Merme - the matzoh meal used to be sold in boxes, now it is sold in round, tall, cardboard cans - the first time I was looking for it a few years ago and couldn't find it, I didn't realize that all the companies had changed the packaging!!!

I think I'll let Diane post the noodle pudding recipe, as the one she sent me is the same one that I have in my cookbook.
