This was a recipe that my mom gave me many years ago -
about 30 or so - when she was on one of her many diets.

Health Salad

3 lbs. cabbage - green, red, or both combined
(you don't really need all 3 lbs - use your judgement as to how large a salad you'd like to make)
3 green bell peppers
3-4 large carrots
1-2 cucumbers
1 medium onion (I use red)
3 tsp. sugar (or 6 packets of sweet 'n low, or Equal)
1/2 cup oil
1/2 cup water
1 1/2 cups vinegar

Shred cabbage and carrots as though making a slaw.
Dice peppers, cucumbers, and onion.
Combine in large bowl.
Mix oil, water, sugar and vinegar in medium bowl
and then marinade vegetables in it.
Chill for a couple of hours.

Enjoy!

That combination cooked makes a wonderful soup. Weight watchers has it as a "free" food. Of course you can add any other veggies to it as well...but they recomend you eat a bowl of the soup (or salad this way) before your meals to act as a "filler" to help you cut down on the portion sizes of your meals but still feel satisfied.
