You have great space to work with there! I'm working on my 2.5 acre lot that had no gardens when I moved in. I had very few tree's so I started by planting lots of trees and shrubs. I then started to add gardens around the house (foundation plantings). I've now got a few seating areas picked out where I'll be adding more shrubs and perennial beds. You have the benefit of having alot of mature trees so that's a good start.
