Why the name? It's simple. No really, anyone could make it. Even a man.

(It's tongue-in-cheek.)

1 Pound Ground Beef (leaner is better)
1 Can Red Gold Chili Ready Tomatoes
1 Can Brooks Hot and Spicy Chili Beans
1/3 to 1/2 Can Tomato Paste
1 to 2 Tablespoons La Sabroza Chipotle Salsa (it's like a smokey, sweet barbaque sauce)
1 to 2 Teaspoons of Franks Red Hot (it's mild)
A nickels worth or Salt, pepper and Chili Powder or so (it's about the size of a nickle when you pour it in your hand)

--

In medium sauce pan, combine meat and salt and cook at medium temp until browned.

Add Tomato Paste, pepper and Chili Power; stir. Add Tomatoes, Beans, Chipotle and Hot Sauce; stir. Reduce heat, partially cover and let bubble slowly for about 20 minutes or so.

--

It isn't hot, not a mile. I doubt it's healthy but you've got 20 minutes to whip up a salad or clean up some veggies to complement.

I live in/near farm communities. One Grocery caters to the Mexican market. (It's a small chain that serves it's communities well.)

The Chipotle Salsa does makes it sing.

I grew up in a town of 3k. It now has 5k and three small speciality markets; Indian (Asian), Chinese and Mexican.

That's diversity on steroids!

For the record, I love Frank's Red Hot. It is the most flavorful mild hot sauce that I have found. I use that in my hot wing sauce & a variety of other things.

As for chili, I go my own way. I am what you would consider an eclectic cook. I mix & add until it just tastes right. I like to use black beans rather than traditional chili beans.

I guess if I am going to recipize, I better start alist...

Amounts to your desire.
black beans
diced tomatoes
tomato sauce
tomato paste
minced garlic
diced onions
diced green pepper
sliced mushrooms
meat (I use Morningstar* veggy crumbles)
1 roasted habanero pepper minced (seeds included)
in a 3 gallon pot
chili powder (lots)
cumin (next most, but not alot)
cayenne pepper(if you skip the habanero)
black pepper
season salt (not a fan of straight salt)
celery seed
mustard powder
garlic powder (if you choose not to use minced garlic)

I make "man chili" meat free. Less salt and pepper. A little less chili powder.

I like chili hot enough to make me sweat, most people don't.

This is a tame chili.

It's an easy to make, fast to the table but tasty chili. (tabasco on the table works)

--

If you use the entire can of tomato paste ... chili dogs! (just up the chili powder a touch)

As for chili ... sliced mushrooms
I like Frank's. It's the taste, not the heat.

Shrooms are an interesting twist. I've always viewed them as a meat substitute but I'm not a big fan of canned so I'd be inclined to think it is not "man chili" material.

Still, I'll give fresh sliced a try.

I searched online for "meatless" chili. I bristle at imitation meat. If you don't eat meat, why do you imitate it? I found the Turkey based meatless chili's funny. Turkey isn't meat? I settled on the idea of beans.

Real chili doesn't have beans. Beans were added as a protein sustitute by homes that couldn't afford meat. If you can replace some of the meat with beans, why not all? Black beans, great northern, whatever ... maybe two cans of kidney's.

I use the same recipe but leave out the meat and most of the salt. Chili powder and, to a lessor extent, pepper are added to offset tomato paste so it's to taste based on thickness.

I should point out that I use black and red pepper about 50/50.

Black beans, I think, have the best flavor of all beans.

They are used in alot of gourmet dishes & in salsas & corn chips.

Almost every store has a salsa labled "Black Bean Salsa" or "Black Bean & Corn Salsa".

I have had "Black Bean Tortilla Chips". I have not ever seen any other "bean chips".

When restaraunts make gourmet salads, there is usually one or more that have black beans as an ingredient.

I suggest that you try them.

And if anyone is interested...

The 10 most healthful beans in order.
1 soybean
2 pinto
3 garbanzo
4 lentils
5 cranberry
6 black-eyed peas
7 pink
8 navy
9 black
10 small white

honorable mention : kidney, lima & split peas

I did look into it.

** I don't eat alot of soya. That info was in one of my health books. **

I like to check the Snopes(debunker of internet urban legends) site for possible true/false, when it comes to things found on the NET. And, this is what they say.

bad soya

It seems that bad soya is byproduct tofu & not the bean itself. I will research further.

From your link Rugby, "However, soy (or soya, if you will) has its dark side: it has a weak estrogen effect, and its long-term effects on breast cancer are not known." Weak or not, estrogen does not fit "man chili". That was my only point.

I would not use it in chili at all. As I stated earlier, I use black beans. I just wanted to list the most healthful (allegedly) legumes for any who were interested.

Don't guess you folks could take real Texas chili could you. when we want beans we cook beans when we want chili we cook chili. Start with at least a pound of lean chili grind beef add Elk,Bear Antelope or Deer if you can. Also can use ferril Hog or Javalina( I have also used Rattle Snake meat). Chop up plenty of onion's, at least one pound of Jalapeno's and a pound of Habanero for flavor. Add two or three tomatillo's(sp) which is a green Mexican tomato. Peel the shuck off wash real good dice or mince. Two oz of Black or Deep Red Chili powder or about a palm full I use two so it will be good. Add cumino about an oz.,cayene pepper about a hand full. Forgot add four cloves of fresh garlic minced cook slowly for about two hours.Add salt and pepper to taste serve with Tobasco to set it off and Tortillo's. You can use Trotillo chips also.
