I made the apple mint jelly but it didn't set. Any ideas on what might have went wrong? I used a hot bath sealing process. I made my own apple juice rather than store bought and was alittle short on the sugar. I guess I should have stuck to the recipe a little closer huh?

I don't have a clue for you, Tammy, but I did want to say the same thing happened with my aunt and her peach jelly. It didn't set. She used it as syrup and I have to say that it was pretty darn good on biscuits and pancakes...

The sugar is probable the problem, when you are boiling everything, you can test it, and sometimes it does take longer to reach the right point before you place it into the jars....But you shouldn't have cut the sugar. It is also possible it will set up more if you wait a few weeks, But I had some that was on the thin side and it was great on pancakes. I think you can reheat it all, and add some pectin and then seal again and it should set up, if you want to go to all that trouble.

I definitely want to go to all the trouble. Now if I can just get back to the store while they are still stocking pectin. I used my one and only packet. I wonder if they sell it on-line?

Thankyou for telling me how to go about saving my first homemade jelly ever. Which of course makes it very very important.

Also would you know what I can use to write on the fancy lids that came with my set of jars?

Well it's reboiled and processed and sealed. I'm crossing my fingers. But this time I got the foam that it talked about in the recipe so I have hi hopes.

Well maybe it will gel in a couple of weeks lol. Next time I'll try something more traditional. Funny it was gelling in the pot but not in the jars.

Oh well I'll figure it out sometime.
