I love the taste of a fresh cheesecake it is so sweet and tart and you can use any fruit you would like.

I start off with making a graham crust base(You might need a little more or less butter, depends)also take out a 250g block of cream cheese to soften for an hour or so.

Take about 1 and 1/2 cups graham crumbs, add 2 tbsp white sugar and mix. Blend in about 3-4 tbsp melted butter or margarine. Mix and press in pan. Bake at 350* for 6-8 minutes, cool completely.

Choose a fruit of your choice and cut up, drain as well. I've used bananas, peaches, pears, strawberries, in fact all different berries, even canned pie fillings and canned fruit(drain the juice from canned fruit though).

You can now either mix up two envelopes of dream whip or buy a tub of it ready made and thaw..

Whip up your 250g block of cream cheese until smooth, takes a few minutes. Add 3/4 cup of white sugar and mix well for a couple of minutes then add about 1 and 1/2 cups of dream whip(thawed or hand made). Whip really well.

Now you pour your cheese mixture in the cooled pan of cooked crumbs. Add at least one cup of fruit on top then cover with another 1 or 1 and 1/2 cups of whipped topping again. Refridgerate for a couple of hours to set.
Best fresh cheescake ever.
