First I guess I need to say Hi everyone again, been gone so long seems like forever,

okay question.
Hubby likes watermelons and we set out a couple plants (seeds) and they are up now. We'll only eat a couple mellons all summer so only need a couple.

I know when they grow prize mellons they pinch off all but one, so I was thinking I could remove all but 2 on each vine for a bigger and better mellon.

here's question, when do I remove unwanted mellons and how do I decide which ones to remove?
no mellons yet but I do have blooms.

I'd leave the first couple that set fruit Belinda. Then nip the rest of the female flowes off if you need to. Maybe let 3 or 4 get started and then start pinching the new ones off in case you get some failures. You can always thin out later.
