1/2 cup Chopped onion
1/2 cup chopped celery
2 T. butter or Marg
1 Cup Chick Broth
1 cup beef broth...{or 2 cups whatever you have}
1/2 tsp.baking soda
2 T.cornstarch
2 T.cold water
3/4 cup sauerkraut,rinsed and drained
2 cups half/half
2 cups chops cooked corned beef(or shaved turkey or whatever)
1 cup shredded swiss cheese

In large pan,saute onion/celery in butter until tender.Add broth and baking soda.Combine cornstarch and water;add to pan.
bring to a boil;boil 2 mins. reduce heat.add kraut,cream and corned beef or meat;simmer and stir 15 mins.
add cheese;heat until melted.
season to taste.
Garnish w/rye croutons if desired.
I add more cheese on top of that too;-)

This is going to be wonderful for my soup collection! I have friends with large, busy families and I like to make a big ole pot of soup to give them when I know they are in a particular crunch for time and energy.

Chenno. This is my kind of recipe. If you don't have something, leave it out. If you don't like something, leave it out. If you want something different, put it in. Wonderful. A true soup, a true recipe. thumbup
