For one of our Relay fundraisers, we are putting together a cookbook. They've asked us to tell our friends about it and ask them if they would like to give a recipe that will be printed into the book. So, here I am asking you if you have any recipes that you'd like us to print in the book. The book will be sold as a fundraiser in a couple of months. There will be a "In Memory Of" section, so if one of your recipes comes from someone who has died from cancer, let me know so that it will go into that section. I am not sure if there is going to be a section for recipes that are from someone who is a survivor...or currently battling cancer...but I will let you know when I find out. So, if you would like to give a recipe, please PM it to me ASAP as they need the recipes soon so that they can get a move on the book being printed.

Jenn...this is wonderful..I would love to have one of my mother's & Grandmother's recipes in the book...they both were cancer victims...but not breast cancer, does that matter?

No, the Relay for Life is for all cancers. The only thing that I'm doing with the breast cancer names is the quilt that I'm working on. You can give as many recipes as you wish, also.

What a wonderful idea Jenn. Will we be able to purchase the books once they are done. These kinds of cookbooks are ones I love to collect.

Yes, I will let you know as soon as they are available to buy. I didn't want to say anything up above because my goal was not to sell the books to my friends here, but rather, was to give everyone an oppurtunity to have a special recipe in the book. BUT, yes, the book will definately be for sale. Also, I wasn't really sure if I was allowed to post that it would be for sale, so Bill, or hostesses, if you need to, go ahead and delete that part of the post, ok?

Of course you can continue to promote the Relay here Jenn, including the book's sale.
You are also more than welcome to add any of my cookie recipes to the book if you'd like.

Jenn my wife had a poopcorn cake recipe everyone loved. Could I put it in memeorial she died of Diabetis and heart failure not cancer. Ether way I will pm it to you.

Jimmy, the recipe can definately go into the book, although, I do not think that it will go into the "In Memory Of" section because that section is specifically for cancer. If you have your wife's name with the recipe when you PM it to me, it will be with that recipe. Sorry I can't do more for you, but that is how this book has been set up. I'm just trying to get lots of recipes so that our book is a success.

Bill, I feel my best when I'm working on Relay stuff right now. It helps me to stop focusing on me and what has happend and start focusing on helping people who still have lots of life to live. thumbup

I recently received an email from the girl who is in charge of putting the book together and such. She has set a deadline for the recipes...December 31st...after that, she can't take anymore. So get those recipes in to me ASAP!!! smile

My variation of Cherry Cream Cheese Pie

1 baked pie crust

1 large size pkg cream cheese
1 can condensed milk
1 tsp vanilla
1/3 c. lemon juice
1 Tbsp. sugar
14 c. finely chopped pecans
1 can cherry pie filling
Bake pie crust until done. Spread chopped pecans in bottom then sprinkle with sugar.

Soften cream cheese in microwave, add condensed milk and stir until smooth. Add vanilla and lemon juice. Pour into pie shell.

Refrigerate until set. Top with pie filling.
The pecans give this a different taste than the grahm cracker crust.

Thanks to everyone who has sent recipes in already...and to those who are finding recipes to send to me. Kelly, the girl who is in charge of the cook books, is really excited about how many recipes have come in from my friends (YOU) in the last day!

Don't panic if it looks like I haven't gotten your PM's. I get copies of them sent directly to my email and often read the email versions way before I get online to actually look at them here at the forum. smile I go through the PM's at least once a day.

I'm trying to keep track of people who have said they'd like to buy one or more of the books, but I may not remember everyone, so when they are available, I will post something on the forum. smile

Here is one of my own, hope it helps. Sorry it's so late. I'm not around as often as I used to be.

Christmas Bread

1/2 Cup dried fruit chopped
1/4 Cup Cherry Koolaid Sweetened
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
[3/4 cup sugar if that is inline with the bread recipe]
1 stick butter
1 1/2 cups flour
1/2 cup whole wheat flour
1 tsp salt
1 1/2 tsp baking powder
2 eggs
1 tsp vanilla extract
1/2 cup nuts (optional)

Soak the dried fruit in the cherry koolaid overnight.

Preheat over to 350 degrees F. Grease a 9 X 5 inch loaf pan

Mix together the dry ingredients. Cream the butter and beat in the eggs and fruit. Stir this mixture into the dry ingredients. Do not mix more than necessary. Gently stir in the vanilla, & nuts if used. Add more liquid if necessary.

Pour the batter into the loaf pan and bake for 45 to 60 minutes, until nicely browned. A toothpick inserted into the center of the bread will come out fairly clean when it is done. Cool on a rack for 15 minutes before removing from the pan. To store, wrap in waxed paper.

Sure! No problem! My next Relay meeting is on January 19th and I think I will get more information from Kelly then. I'm not sure if they just wanted the books to be done in time for our relay or if they will be selling them earlier than that. Iwill definately keep you posted.
