Fresh is better, I like to cook mine with some bacon grease in it.UUUMMMM UUUMMMM good!!!
Amigatec: Try cutting up a hard boiled egg and add some of that bacon, that you fried to get the grease, crumbled up on your spinach before you add the bacon grease--especially good!!!
There is also a way to add vinegar to the bacon grease while still in the skillet, (fire off) quick put on a lid
when the splattering sounds die down, put on the above items --add a sprinkle of sugar and stir all well--works good on Chicory too!!!
