My peppermint is finally getting some big leaves on it like you see in the grocery store sometimes. How do I encourage the big leaves?

You could say to the leaves, "What big, beautiful leaves you are. Keep up the good work." That would be encouraging. lol lol

Peppermint puts forth bigger leaves as the plant matures.
This is also true of potted peppermint IF the container is large enough.
I have leaves right now as big as large basil leaves.

I put it outside in the garden so it should have room to mature over the summer. I have a window planter one of those 4 foot long boxes. Do you think that would give my three mints enough room this winter?

Yes, but they won't be as big. Size of the plant isn't important really, as long as mint has sun and water it's happy.
Also, the smaller a plant is kept trimmed, the smaller the root ball will be (in most cases), so keeping a container plant small is key.

I would never think anyone who talks to their plants is a fruit case, I do it all the time, but my DH and DD's think I am. Maybe I need to talk to them more you think? lol

The only time I talk to my plants is when I've just bought and planted them.
Then I say, "OK, you have a choice between me and the nearest landfill-you choose".
And they all thrive !
