Does anyone have any suggestions for making Jell-O Salads interesting or preparing a variety of them? I LOVE Jell-O salads but seem to get stuck in a rut with them.

I have to say I have never heard of jell-o salads, so spent the last few minutes googling around to find out what they are! I found the following site, which appears to have some interesting recipes (7-UP, Ambrosia, Cranberry, Lime, Peach, Raspberry, Strawberry Pretzel, Cherry, Lemon, Orange, Pistachio, Strawberry, Bellini, Applesauce, Apricot, etc):

Just so's you know, many Americans who grew up in the 1950's and 60's fondly remember family meals consisting of meat loaf, mashed potatoes and Jell-O Salad. It is also standard fare on many types of buffet tables.
I think my all-time favorite style is w/ mini marshmallows included if not outright Ambrosia.

We do have jellies, but I havent seen anything quite as elaborate or interesting as some of the recipes in the above link - but I suppose they are a little like British trifles (friut, sponge, jelly, custard and cream) which I cant get enough of!? I'll maybe have a go at making the apricot one next weekend!

Merme: If I do say so myself--it is terrific. and you can change it to please anybodys tastes. Not to mention the calcium you are getting from the Cottage cheese.
Bonus: if people do not see you make it, they will never realize it is CC.

That is the same recipe my mom made when I was a kid. I love it!!! We always used pineapple, but would change the jello flavor. I really liked pineapple jello with pineapple, but really its all bout the color you want and not so much the flavor. I didn't know anyone else made that! How fun!
