The first is a chop salad with my homemade dressing. Feeds 3-6 people (depending on the size of bowl)

3 heads butter lettuce, washed and chopped
3 green onions chopped into small pieces
1 chicken breast, cooked and cooled, cut into strips or small pieces
salami pieces
1 can garbonzo beans
3 roma tomatoes, middles cut out, chopped into small pieces
Mozzarella cheese

Dressing
2 1/2 Tbsp canola oil (veg oil works too)
2 1/2 Tbsp extra virgin olive oil
1 Tbsp basalmic vinegar
1 Tbsp red wine vinegar
1 Tbsp sugar
1 Tbsp lemon juice
1/2 Tbsp dijon mustard
1 Tsp basil
1/2 Tsp both salt and pepper
Mix together and pour over salad.

The second salad doesn't have a name, we just call it the creamy salad

1 head butter lettuce
1 head green leaf lettuce
1 head red leaf lettuce
3-4 roma tomatoes, cut into 4's
1 cucumber, peeled, slices cut in 1/2
1 red onion, I cut them into thin rings then cut the rings in 1/2
small white mushrooms
gorgonzola crumbles

Dressing is the same as above except add about 1/2 cup of sour cream to make it into a creamy italian dressing and pour over the salad.

I've never shared these recipes before, hope there is someone out there that likes salad as much as I do. I have other recipes too, if any wants them, these 2 are my most popular so I thought I'd share.

Salads are one of my most favorite things to eat. I love trying new ones and making them from scratch.

I just whipped up the dressing. Oh my god. Ever since I had my second baby, I haven't been able to eat any kind of salad dressing, not ranch, bleu cheese, italian. Nothing except my grandmother's, whom I've only seen once since then. This is very close to hers and is excellent. I think I'll make a double or triple batch, put it in a jar, and just give it a good shake every time I need it. Do you think it will keep long? Sooo good. Thanks!! kissie

Glad you liked it! I'm not really sure how long it would keep, I've never tried that. You'd think with ingredients is has it would keep at least a week, but, like I said, I'm really not sure. Did you make the plain one or the creamy one?
