What are some Cold-Weather Herbs I can plant for the Fall and Winter.

I'm in zone #8/14.

Thyme, Oregano, Sage, Parsley, Rosemary can all tolerate a light frost...
Chives you can harvest up until Autumn.
Oregano, in my opinion will do the best, Sage and Thyme as well.

I'm in zone 9, and we don't get much frost, usually. So, I imagine you wouldn't either.

Each year is a little different. The past Fall-Winter we had about 8-10 days with frost, but only one or two days with heavy frost, which only lasted for about three hours.

At least two days some of my Vegetables were completely encased in solid ice for several hours! I was horrified when I saw that!!! Most of the plants survived just fine though. We had one day with 18 Degree F. temperature for several hours! My Calendulas were still in full bloom! Lost all my potatoes that day, but everything else survived (Greens, Root Vegetables, flowers, and even several Sage plants in the ground and several Sage plants in one pot)! Three Lemon Grass plants also survived, but one of them died back to the ground, but then started growing again around late January or early February. Oh yes, the Geraniums shriveled up, but the roots survived and grew new plants later on.
