I have 6 cauliflower plants that have very large leaves and look great, but they aren't producing the actual cauliflower. What gives?!

I grow mine in a greenhouse and last year I had that problem and was advised that it may be getting too hot for cauliflower, so I "tied up" all the leaves so the center was not even visible, it may help the center to stay cooler. But I don't know how hot you are getting. Below, the caufiflower is on the left, all tied up. [Linked Image]

It hasn't been very hot here in PA. Lots of rain, but from what I have been reading it's been perfect weather for lettuce, broccoli, cauliflower etc. My lettuce are great as well as my broccoli. I will try tieing them up. Thanks!
