My garden is going to have way too many cucumbers for my family to consume. Does anyone know of any way to preserve cucumbers without turning them into pickles? I would like to keep them as fresh salad cucumbers.
Like quite a few vegetables, they just do not freeze well. Freezing really alters their structure and makes them unpalatable, mushy and tasteless. I have never heard of them being preserved anyway but by pickling.

A magical answer could still happen. potatoes do not freeze well unless they are prepared in special ways (like commercial french fries)but they are offering frozen potatoes for steaming and mashing now. I have tried freezing partially cooked or fully cooked taters on my own and been unsuccessful. They come out watery and mushy and flavorless. So processing may come for cukes someday. I just am not fond of much processed foods. I really like to know what is in my food and what was done to it. I am leaning further and further towards whole and organic stuff.

when I was dating my husband my furture MIL would prepare mashed potatoes & freeze them for her son. they tasted just fine--she put them in seal-a-meal boil bags

I freeze many things..Never did tators tho. I freeze corn, raspberrys, currants, carrots , beans, cabbage, an whatever fruit I can find. Apples too.and sauce.....Skys the limit.
