Hello everyone,
I looked here and didn't see a zucchini bread recipe. If I missed it can someone please point it out? If anyone has a good one to share, can you please let me know? I made a basic recipe with flour, sugar,oil, eggs, cinnamon, salt, baking powder, baking soda but was so disappointed. Perhaps it was the baker, but I think I am looking for something made with bran and maybe honey or molasses? Something with more texture and a richer flavor. Any suggestions are appreciated. 2 loaves
3 eggs
1 cup oil
1 teaspoon salt
3 cups all-purpose flour
1/2 teaspoon baking powder
2 cups minced zucchini (peeled, raw)
2 1/2 cups sugar
1 tablespoon vanilla
1 tablespoon cinnamon
1 cup chopped walnuts

1 Beat eggs and sugar in a mixing bowl.
2 Add oil, vanilla, cinnamon, and zucchini; Mix.
3 Add dry ingredients and mix well.
4 Grease and flour 2 loaf pans.
5 Bake at 350 degrees for 45 minutes to 1 hour until inserted knife comes out clean.
6 TIP: chocolate chips, raisins, other types of nuts can be added.

I will say when I do these I use about half the oil called for and I'll add either water, milk or juice to make up the difference. Orange juice is excellent! I shred the zucchini on a shredder or in my processor.

This is a basic recipe. You can sub a little of the flour for your bran or some oats. Sub a little of the sugar for molasses or use half brown sugar. Play with it until you are happy.

Thank you for the tips. I'll try the OJ first. I've got some oranges from my brother's tree.

Is zucchini bread something you make from those big zucchinis that your neighbor thinks are awesome because they are HUGE? Or do you use regular size zucchini?

You can use either. But it is a good way to get rid of some of those woody huge ones.
