Corn Bread Salad
I know it doesn't sound real appealing but it's really refreshing and goes great with BBQ's , fried catfish, fried chicken,, or even with Sunday's pot roast
The main important thing is to make sure the corn bread is crumbled finely. and veggies are diced very small

2 Pkgs Cornbread Mix( prepare as directed on pkg)I use 2 Jiffy mix in a cake sheet pan( I use a glass one and spray with butter pam)
*Let cool completely and crumble finely* set aside

2 Medium Tomatoes ( cut out seeds and drain extra moisture out, Diced add salt and pepper and garlic powder if you like
¼ cup each green bell and red bell peppers Diced
½ cup onion of your choice of yellow, white or purple,, ( I prefer Purple onion,,, DICED
9 slices Bacon cooked and crumbled
½ cup Sweet pickles Diced
Mix all the above and set aside

Combine
1 cup mayo( your choice, but Miracle whip is best
½ cup sweet pickle juice blend well
Combine corn bread, and veggie mixture in a large bowl stir in Mayo mixture ½ at a time until all cornbread is moist and stiff, refrigerate at least 2 hours before serving. I have found that 1/2 cup of sweet pickle juice is a bit too sweet for my taste,, I usually use a third instead . This serves 4-6 (twice > (depending),, large enough amount for a social gathering!
