Corn Bread Salad


I know it doesn't sound real appealing but it's really refreshing and goes great with BBQ's , fried catfish, fried chicken,, or even with Sunday's pot roast thumbup
The main important thing is to make sure the corn bread is crumbled finely. and veggies are diced very small teach

**************************************************************


2 Pkgs Cornbread Mix( prepare as directed on pkg)I use 2 Jiffy mix in a cake sheet pan( I use a glass one and spray with butter pam)
*Let cool completely and crumble finely* set aside

2 Medium Tomatoes ( cut out seeds and drain extra moisture out, Diced add salt and pepper and garlic powder if you like
¼ cup each green bell and red bell peppers Diced
½ cup onion of your choice of yellow, white or purple,, ( I prefer Purple onion,,, DICED
9 slices Bacon cooked and crumbled
½ cup Sweet pickles Diced
Mix all the above and set aside

Combine
1 cup mayo( your choice, but Miracle whip is best
½ cup sweet pickle juice blend well

Combine corn bread, and veggie mixture in a large bowl stir in Mayo mixture ½ at a time until all cornbread is moist and stiff, refrigerate at least 2 hours before serving. I have found that 1/2 cup of sweet pickle juice is a bit too sweet for my taste,, I usually use a third instead .


This serves 4-6 (twice > (depending),, large enough amount for a social gathering!

This actually sounds pretty good...'cept for the pickles. (I don't eat sweet stuff...)
I think I'll make some this week-end and take it to my dad so we can set outside and eat together.
