3-4 very ripe bananas, thawed. (I use four if they are small and 3 1/2 if they are larger) 3/4 cup sugar 2 eggs 2 cups flour 1 tsp baking soda 1/2 cup nuts, chocolate chips, whatever you like, this is optional.
Preheat oven to 350 degrees. Mix all ingredients together except nut until well blended. Fold in nuts, pour into lightly greased loaf pan. (I use olive oil cooking spray) Bake for one hour or until toothpick come out clean. Remove from pan and cool on a wire rack.
Plant smiles, grow giggles, harvest love.

Thank you, Cheryl! This sounds great but certainly easy enough! I like that it has no oil.
We were given two hands to hold, two eyes to see, two ears to listen & two legs to walk. But why were we given only one heart? The other heart was given to another for us to find.

Just make sure those bananas are black. If they aren't really over ripe and mushy it'll come out dense and dry. Hope everyone likes it! Aros told me yesterday that he had never had banana bread until he met me. Crazy huh?

I must give this a try as well..I agree black bananas give the best texture and taste to breads.

ah--I need to try to find some old bananas so I do not have to wait to try this new recipe. sounds yummy and low fat.
