I have grown carrots the last two years and both years they have come up tasting spicy. I have tried using different varieties and when I planted them this year I used brand new raised garden beds (made from untreated lumber) with soil from another location, about a mile away. I do not treat my soil with anything and have not added any fertilizer or other products to the new soil yet this year. Can anyone tell me why my carrots turn out like this?

It has something to do with something called 'terpenoids'...Change varieties next year.

I remember many years ago I grew some and they tasted like soap..I changed to a variety called 'Nante' and never had any trouble after.

Good info Tamara.

More info about Terpenoids here.

From above link:

Quote
Carrots can taste soapy or bitter - Two ingredients determine a carrot's flavour: sugars and terpenoids (volatile compounds that impart the carrot flavour). Some varieties are naturally high in terpenoids, which make the carrots taste bitter or soapy. Because terpenoids develop earlier than sugars, a carrot that is harvested too young might taste bitter.

Quote
Storing carrots near apples or other fruits that manufacture ethylene gas as they ripen, encourages the development of terpenoids in the vegetable and causing them to become bitter when exposed to ethylene.
Raw carrots will taste more soapy than cooked ones, as cooking breaks down the terpenoids allowing the sweetness to come through.
The Nantes variety produces roots which have higher sugar content, lower in terpenoids and less suitable for long-term storage.

Sorry about that..try the 'Nante' next year. That should clear the problem.
