With our mountain of tomatoes at the end of the season, does anyone have a good ketchup recipe they'd recommend?

Also, what else do people do to preserve them?

We've tried oven-drying them with mixed success, they taste amazing, but not sure how long they will keep, even in oil.

Do you have freezer space? One way is to cut them up on a large sheet with onions and, maybe, garlic and roast them. These can be slow roasted for hours or rather quickly in and hour or so at a higher temp. Then bag and freeze in increments to please your family needs. After defrosting they can be used for sauces and things just as canned ones.

Again--if you have freezer space---

I have just frozen them as is in freezer bags & then used them is soups such.
I have also blanched them to remove the skins & then pushed one up on another in a cleaned out a 15 oz tomato can until it was full. Then I would transfer them to freezer containers & freeze them. later I would have 1 cans worth of tomatoes to use in recipes during the winter--No need to measure the second time, that was already done
