we got to the Fire departments cook out late--no bake sale food left & only bratworst sandwiches were left for supper.

it is a good thing I had corn chips & apple pie at home.

Well since we have a weeks worth of chicken to use up. Yesterday I made a chicken soup, today will be a chicken stew lol

Another day maybe..right now I need 'one pot' dishes so I can get outdoor chores done.

I'm thinking of chicken fried rice, chicken balls, and a stir fry for tomorrow. I need to get the freezer empty so I can defrost and restock soon.

Hamburger-Greenbean casserole

You know the one with tomato soup and mashed potatoes on top??

I u sed 8 oz of tomato sauce insted & I did not put the mashed potatoes on top, but served them on the side. WE had that all the time at home when I was a kid.
ost the recipes now say to add shredded cheese but mom did not so I do not either.

Merme--here ya go

Hamburger-Green Bean Casserole

1 can French styled Green beans, drained
1 can Tomato Soup
1 lb. Hamburger, browned & drained.
Mashed potatoes (instant or homemade)
1 egg
1 (4 oz) pkg Cheddar Cheese

Brown Hamburger and drain off excess fat. Add green beans and tomato soup to meat and mix together. Put into a greased 2 qt casserole. Set aside. Mix the egg into the mashed potaotes.

Place mashed potatoes on top of the green bean casserole and then sprinkle the shredded cheese on top.
(mom put the potatoes around the edge of the casserole so there was an uncoverd place in the middle of the casserole.)
Bake at 350*F for 20-25 minutes or until heated thru.

You can (& I think should) add the cheese the last 10 minutes of the baking time, so it has just enough time to melt & will not burn.

Here is what I really did:
I added about 1/2 cup chopped onion to the meat when browning & seasoned meat to taste.
-I had regular cut green beans so I used them and chopped them into shorter pieces with a fork.
I used an 8 oz can of tomato sauce instead of the soup.
I looked at a recipe that said to use 8-10 oz of Ragu so I think next time I will buy an 8 oz can of sauce with oregano and garlic added instead of the plain.

I would not use instant potatoes next time. The flavor & texture is not as good as homemade. Also I would use a bit less milk when mashing the real potatoes so when the egg is added the potatoes will not become saucy. They need to be sorta thick, so they stand up to be the topping on the rest of the casserole.

I left out the cheese but an idea would be to use the oregano flavored sauce and then add shredded Mozzarella either on top towards the end or possibly mix it in with the beans & sauce.

I know I said chili sounded like a good plan for tonights dinner but I think both DH & I could benefit f rom a chciken soup. If I make it thick enough with veggies & such he will not even notice.

I hope I have chicken in the freezer--I would hate to take the time to go to the store--oh well---we do what we must, huh???

thanks for the thought on the meatloaf--I had forgotten about that option

I ended up making Chili with this pound of meat---DH was so pleased--

not that he was getting Chili--he actually thought it was canned chili---he asked me the brand & when I said gee it is carol's "from scratch" brand he was so pleased--- (I am guessing pleased that I made it & did not just open a can????)

I think tomorow night I am going to thin the lsft overs with tomato sauce & then add spaghetti to it--
My mom did this wjhen I was a kid & called it "chili mac". It was more like soup. We shall see waht I really end up doing.....

I love chili mac and make it often (with canned chili). topped with cheese it is a satisfying dish. Mine is not so soupy though.

Your leftovers sound delicious.
By the time evening comes around in summer, I am not always hungry for something hot. But our weather is to be cooling this week. I'm thinking a mess of meatballs; some to be made into subs, some for sweet and sour meatballs with stir fry veggies on rice and some for sauce with pasta. One basic thing and multiple meals to feed lots of people.

A cooking show was making meatballs today & now you---I feel the need to make some meatballs now.
As tomorow's meals have been firgured out already--salads with meat on them--

I am not going to have meatball meals all week. Most will be frozen for meals the next couple of weeks. I like to cook but not necessarily every day. Having things to take from the freezer and add sides is very good. And I share with others.

Tonight's dinner is in the crockpot. I layered chopped yellow onions followed by 3# of beef tossed with dried onions and flour. Next was a layer of green peppers and small whole white onions. New potatoes and carrots and celery on top of that, about 3 more pounds. I put a thick layer of mushrooms on top and added water. When that cooks down a bit I will add more 'shrooms and some green onions. Can you tell we like onions around here?
Stew for dinner and a couple other dinners as well.

Tonight one of us had Mac Donald's and some of us had take-out Mexican food. I did not want to dirty up my clean stove. It was an early meal so if anyone is starving later I have bunches of easy things, like yogurts and fruit and deviled eggs. A few leftovers in the fridge too.

I've been reading and hearing a lot about kale being a super food. Today I decided to try it. It's cheap!!! I torn the stems out and chopped up the kale, sauteed a bit of red onion in some olive oil, added the kale to the pan for about 4 minutes stirring it around, then added the kale and onions to a bowl of cranraisins, walnut pieces, cut up cherry tomatoes and topped it with 3 pieces of crumbled bacon. Since I had used olive oil I didn't add additional dressing to mine. Johnny added a little Ranch. It was great. We ate it all.

very simple really I make some rice, small diced onions and mix it into ground chuck and season it with garlic and onion powder,,blackpepper Mrs. Dash table blend a pinch of Cayenne powder, and sprinkle of liquid smoke, ball up a little larger than a large walnut,, bake at 350 until 1/2 done *about 20 Minutes* then brush BBQ sauce on ,cover with foil and bake another ten minutes then take foil off pour on more sauce and let them bake to "stickiness/ glaze" about 10 more minutes, Sometimes I'll make those and put in toasted Hoagie buns for BBQ Meat ball sandwiches thumbup

Tonight it will be baked chicken and homemade mac n cheese. Tomorrow will probably be leftover chicken in a cream sauce with veggies over something. Baked potatoes are my favorite.

We had a mixture of diced & fried potatoes-onions & carrots as a side dish & grilled burgers with it. For an appetizer we had summer sausage on crackers-with dijon mustard & pickled pepper rings. YUM !

And here I thought I made it up, just cause it was simpler than making a veggie seperate----well geez. But yep, it was good !!!
I think I may add ground beef to it and call it a full meal some time...
