Anyone have a great 'tried and true' recipe they'd like to share. I am looking for a recipe for a nice dark heavy banana bread. My old recipe is more 'cake/muffin like'..

I have a recipe that I have only tried once--it is dark though--is moist but really does not taste like true banana bread. DH likes it really well though.. I have another one that is tried & true BUT is light in color. let me know---which you want & it is yours

Hit me with both Carol..so I can check it against mine.

I just use egg, butter, flour, sugar, banana, soda and milk in mine.

This first Recipe I have in my Pillsbury Family Cookbook that I got as a wedding present. (or was it a shower gift??) been using it every since.
_____________________________BANANA BREAD____________________________________
Preheat oven to 350*F
1 Cup Sugar 1 loaf
1 Cup (2 medium) mashed bananas
1/2 Cup margarine or Butter, softened

1/4 cup milk
1 tsp. vanilla
2 eggs
_______________________

2 Cups flour
1/2 cup chopped nuts
1 tsp baking soda
1/2 tsp salt
_______________________

Grease not oil bottom only of a 9x5 or 8x4 inch loaf pan.
I put waxed paper on the bottom of the pan which I hold in place with a dab of shortening or lard. Then I grease the paper on the side that will be touching the batter. This will ensure the bread coming out of the pan easily.

IN lg bowl blend the first 6 ingredients. beat 1 minute at medium speed.
Stir in the rest of the ingredients until dry ingred. are just moistened. Pour batter into prepared pan. bake at 350*F for 50-60 minutes or until toothpick inserted comes out clean. Cool 5 minutes remove from pan cool completely.

PS I make a crumb crust like one would for a fruit crisp & put it on the top of the batter right before I pop it into the oven.

lol that's the same recipe I have here...maybe i'm not getting the heaviness because I omit the nuts why What do you think?

I have only used this recipe one time.
But it makes 2 loaves and Rod said he liked it.
I had trouble getting it done though, I had to forget the time in the recipe & just test it periodically.

________________BANANA NUT BREAD____________________________________________
325*F for 1 hour 10 minutes.
3-1/2 Cups flour each = loaf 16 slices
3 cups Sugar
2 teaspoon baking soda
1 teaspoon salt
___________________________

4 eggs
4 medium (2 cups) ripe bananas, mashed
1 cup vegetable oil
1/2 cup plus 2 TB buttermilk (I used vinegar in milk)
2 teaspoons vanilla
2 cups chopped Walnuts--

in a large bowl, stir together first 4 ingredinets. In another bowl, combine the rest of the ingredients except the nuts. Blend well to distribute the baking soda.

Next add the flour mixture to the wet mixture, stirring until just mixed.
Stir in nuts
Divide into 2 greased 9x5x3 loaf pans.
again I used the waxed paper on the bottom.
Bake for 1 hour 10 minutes or until a toothpick inserted comes out clean
Cool on wire rack.

PS again I make a crumb crust like one would for a fruit crisp & put it on the top of the batter right before I pop it into the oven.

yes not adding the nuts without replacing it might cause that.
plus I think I would make it thin???

Well I add more flour, I don't like the nuts..maybe I could try oatmeal as the substitute.

yes or perhaps half oatmeal half flour?? just to up the bulk. Extra flour thins out the flavor dont ya think??? do you like raisens or chips of some flavor???

lol no I'm fussy..I'm the one who plucks out the raisins out of the oatmeal cookies. I remember as a child my aunt gave me a piece of raisin pie..my uncle laughed saying it's gonna take her awhile to sort that out.

I'm gonna try the oatmeal..thanks.

Now if those bananas could only go bad lol seems like it takes forever but if you wanted fresh bananas they'd be black by morning. thumbup

I substituted the nuts for 1/3 cup crushed oatmeal..yummy.
