Anyone have an easy pumpkin bread recipe? I'd like to make some this week.

Merme this one is very easy,,,,,,,,,,,

preheat oven to 350
coat bottom and sides of 2 loaf pans with Crisco ( I use buttered flavored Crisco and dust w/ flour or may use the spray coating that comes with flour in it,, :wink:

in a large bowl ,,,
sift together
3 cups flour
2 teaspoons baking soda
1 teaspoon all spice
1 teaspoon pumpkin pie spice
1/2 tsp ground cloves ( optional I added that )
1 teaspoon cinnamon
1 1/2 teaspoon salt

then add 3 cups of sugar,, or sugar substitute of choice
and blend all dry ingredients

in a medium size bowl,,,,
one can (16oz) of pumpkin
4 eggs (slightly beaten first)
1 cup vegetable oil
2/3 cup water,
blend well..
slowly add pumpkin mix to dry ingredients and stir well
may add a cup of chopped pecans, or walnuts or raisins, or combination,,
bake 55 to 70 minutes untill pulled away from sides of pan and when inserted tooth pick or small knife in center comes out clean,,
remove from oven
let rest for about 10 minutes
remove from pan and wrap in saran wrap then foil,, until cooled and ready to eat,,
the saran and foil will retain its moisture
very quick and easy and flavorful,, even better when eaten the next day,

This certainly sounds easy enough for me 'n Maxi, Diane! Thank you! I think he will be very pleased to try his hand at genuine pumpkin bread!


Now I will just need to get more sugar. We never use it, generally speaking, though I do keep some on hand for company. I noticed just the other day the stash was getting low & I doubt there's enough left for this recipe.

I'll let you know how it turns out!

It looked so yummy that I have jsut ran a copy off for my files.-

Diane, did I understand correctly. that you wrap the hot bread in saran wrap and then foil???

I made it this evening - since it makes 2 loaves, I made one plain and one with walnuts and raisins - Amy won't eat raisins, but the rest of us like them.

I just had some of the walnut one - it is yummmmmmmy!

oh, I didn't have enough sugar, so I substituted light brown sugar for 2 cups and it tastes fine.

Hi, just saw this thread. Here is a recipe I make every year and it is easy and good. It freezes well too and is tasty with butter or cream cheese.
--Pumpkin Bread
Ingredients
2/3 cup shortening(I use veg. oil)
2 2/3 cup sugar
4 eggs
1 16 oz. can pumpkin
2/3 cup water
3 1/3 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
2/3 cup coarsely chopped walnuts
2/3 cup raisins (if desired)

Grease two loaf pans, 9x5x3. Mix shortening and sugar, stir in eggs, pumpkin, and water. Blend in flour, soda, salt, baking powder, and cinnamon. Stir in nuts and raisins. Pour into pans. Bake about 1 hour and 10 minutes at 350 degrees or until wooden pick inserted in center comes out clean.

Diane ~ Max & I made your recipe and it turned out GREAT! I usually dislike pumpkin bread because it can be either too dry or too goopy. But this has just the right texture and flavor! We had fun doing it too.

MRW ~ we are going to try your recipe next!

sorry Carol I didn't see this,,, yes I wait about ten minutes before removing from the pan,, ,, and wrap in saran wrap then foil and leave in wraps until completely cooled, it retains it's moisture that way,, this bread tastes better the next day thumbup even after you cut it keep it in the two wraps!
