mmm, yours sounds good.

We had pollock fish, white sauce, yellow beans and fresh potatoes.

It's cooler outside today and I'm making a big crockpot of my moms special chili! It's special because when I was little I wouldn't eat it because I don't like kidney beans. So she started making it with baked beans and it's so good! So much better to me than with kidney beans.

I figure it won't taste just like hers but it will be close enough. grin

Sheri, I just bake Pollock in a pan with lemon and salt and pepper for 8 minutes. Simple because we layer it after with caramelized onions and white sauce.

Mmmm Chili. I love chili also but not the texture of the kidney beans either...so I run them through the food processer and then fry them up into the ground beef. They just turn to a mush and you can't even tell they are there thumbup

Hope you fill your tummy on it today Loz, I would.

I'm thinking of making shepards pie today.

Leftover chili is pretty tasty though Loz. thumbup You could always freeze some too. Makes for an easy supper one night. grin

Jessica, I fry ground beef with onions and make a gravy with the drippings, mix together and layer in bottom of pan, on top of that I layer mashed ptatoes then on top of that I pour a can of creamed corn. Easy and delicious...I bake in a 350* oven for about 20 minutes, cover with foil until the last 5 minutes.

I used to add other veggies also but DD wouldn't eat it so I ended up with this way instead. Most people add a can of peas and carrots into the ground beef mixture.

We ended up having saucy burgers instead lol I forgot to buy creamed corn.

What's a saucy burger? Like a sloppy joe or something? lol

I think I'm going to freeze some of the chili so we can use it Monday on our hotdogs. And maybe I will do some single serve portions. That's a good idea.

Mom makes Shepards Pie. It's so good when it's cold outside to come in and have a big old portion of it. clap

I take a cup of sweet pickle juice(nothing gets wasted here lol ), 1 cup ketchup, 5 tbsp brown sugar, one small chopped onion and a half chopped green pepper. Bring to a boil then simmer for 30 minutes.

I then make cheeseburgers (plain-no fixings) then cut in 4 sections and pour a ladle of sauce over it...it is delicious.

The shepherd's pie sounds good but I wouldn't even know how to make the gravy. rolz lol

The burgers sounds good too.

jessica, You just add a cup of water to the bits of meat that get stuck to the pan and boil it til it loosens, add a bit of salt and pepper for seasoning. Then make a paste with 2 tablespoons cornstarch and a bit of water. Slowly add the paste to the pan and boil a bit til it starts to thicken...instant gravy.

Oh My gosh, I am too afraid to read this thread, I just skimmed and It will wreck havock on my Diet.

I just had an idea...instead of making cornbread why not make cornbread biscuits?It combines two great quick breads cornbread and biscuits.

cornbread biscuits sounds good. is that like half biscuit mix and half cornbread mix? anyone ever had muffins made out of malt o meal? I just love those!

i make cornbread muffins. just use cupcake papers in your muffin tin and use your normal cornbread mix. you just have to watch to make sure they get done.

I like to add a little black pepper and chili powder to my cornbread sometimes. it livens it up a bit.

I guess we're having chili tonight. hhhhmmmmm........if we have cornbread mix, guess I'll make some to go with the chili!

goulash is very different, not only from region to region, but from family to family in the same region. I suspect it is a depression meal.
to me goulash is hamburger meat, potatoes, and whatever veggies you have on hand thrown in. it is thick....not like a soup, even thicker than a stew.
what does it mean to others????

I have had it once--the recipe I had began with stew type meat, that was dredged in seasoned flour and browned and then slow cooked in a tomato based sauce. don't remember any veggies in the recipe.

goulash in my family is elbow mac,, with browned hamburger diced tomatoes and tomato sauce, onions., a little ketchup, a little sugar and seasoning,, when ya grow up with a tight budget,, just about anything we could throw in the same pot was called goulash lol ,,,,,,,,
Never heard of it with veggies in it,,that sounds more like a stew ,,, But I have heard of it with potatoes in it, many People I've talked to have a different version of it too , all depends as Cricket said,, where you grew up and the generational background with the cooks in the family,

Goulash to us is close to what Diane said. It is ground beef, elbow mac, corn, tomato soup, tomato juice and whatever seasonings you like. I put oregano, garlic and pepper. I also add some shredded cheddar to mine.

Jessica I put velveta on goulash the next day and bake it to heat it up and melt the cheese and have garlic toast with it,, Yummy that way too,

Tonight dinner was Baked BBQ chicken,, salad and brownies,,

I have a half a pan of lasagna left! I'd made 2 pans and I'm thrilled I don't have to cook again tonight. haha Mark doesn't care either, even though we had it when Jiffy was here and last night....he'll pretty much eat whatever I stick in front of him. lol

Yes Rod will too.--There are a few no noes but not many.

and thank goodness, he is ok with leftovers too...which I appreciate, because my dad didn't "do" leftovers. If mom fixed laftover food she had to change it somehow so he would not notice so much.


like the beef roast that became beef & noodles
or the ham & beans that became potatoe soup.---I still miss that.

I'm doing up some pork this evening, just like martha stewart showed me this morning! ha ha. with mashed potatoes and...hhmmm...something else??? I was planning on doing up some snap peas from the garden but there were only two pea pods ready a while ago when I went out, and I ate one....so...... ha ha

I think we will have Shrimp Linguini Stir Fry with perhaps garlic bread.

Nothing wrong with that Carol! thumbup I get them sometimes too! grin Tonight we had super fast and easy.....steakums on rolls and fries and baked beans. thumbup Mark was starving NOW---where you'd think he was going to die if he didn't eat right away and that was the fastest thing I have to make.
