Hi, Welcome to the forum.

Harvesting just requires digging out the root. Don't worry if some of the little rootlets don't come up. They will become new plants for next year.

Hi and welcome. I don't know anything about horseradish but you can post a pic by joining a free photo site. I use Photobucket. You upload there and copy and paste to here.

~~Tam~ You can bury all your troubles by digging in the dirt.

That's a heathy big bunch of horseradish you have there. I can't wait until my patch gets that big. What did you think was wrong with it?

you can't hurt horseradish. It is very aggressive. This fall just dig up as much as you want. Anything that you don't want that you dig up just cut into two inch chunks and bury at a 22 degree angle. It will grow you another plant. And as I said the rootlets that get left in the soil also produce new plants.

Your welcome, enjoy your horseradish sauce. I only have one plant this year but I plant to dig up the root and section it into piece and then replant it. So that next year I'll have plenty.

You could make "creamy horseradish" using a mayonnaise base I think. I saw it on a cooking program but I can't remember which one at this point.
