1 box (1 pound) confectioner's sugar (powdered sugar)
1 stick (1/2 cup) either margarine or butter (NOT LITE)
1/4-1/3 c. cocoa
1/4 cup milk (whole or 2%)

place sugar in microwavable bowl (i use the kind with straight sides like comes with an oster or kitenaid mixer). cut butter into 8 pieces, arrange around edge of bowl on top of sugar. pour cocoa in middle. pour milk over cocoa. microwave 2 1/2-3 minutes on high. mix well with electric mixer on high. pour in 8x8 pan lined with wax paper. cut and eat.

can someone help me?? I usually buy my powdered sugar in a bag. I someoone could tell me how many cups of P.Sugar there is in a 1 pound box, I would surely appreciate it.

caroljean, it is 4 1/2 cups, but what i do is take the bag, lay it flat on the counter, smooth it, then "mark it" by putting a flat something (sometimes a rolling pin) in the middle. then i slide it to the edge of the counter and cut the end and let the half pour in a bowl. then i take a few spoonfuls out of the bag for good measure to make sure i have enough in the fudge.

alternately, i hold the bag and "half" it with my hands and do the same thing. just depends on how persnickety i'm being that day.

the good news on this fudge is that if it doesn't set up, you can put in back in the microwave for 45 seconds with more sugar, beat it again, and it will set without scorching. been there, done that lol lol

wow Jiffy--you have answered my DH's prayers. I do not make fudge---I would rather have divinity, and as a result I rarely make Fudge. Rod loves it, and just the other day was commenting on how his mom always made him the best fudge.--so now I can make him fudge when he wants it.

well, supposedly, i am to get a great microwave divinity recipe, and if i do, and it is as easy as this fudge, i'll share. i've eaten the divinity, it is as good as the fudge taste wise, but i've never found one that is easy. i'll let you know when/if i get it!

cool jiffy and it was so good! mine didnt set up all the way but its because i added a little maple syrup to it.... i like my fudge with some maple syrup.... so ive just been eating it like is and i put it over some icecream for my neice and she loves it!

next time, if you are adding syrup and want it to set up, add an extra cup of powdered sugar.

Oh that recipe sounds great!! I was just thinking a week or so ago about fudge that my mom used to make.. awesome taste.. so smooth.. MMM.. she did hers in a pot on the stove.. but I have to try this.. and soon!! Thanks so much!! clap

O.k. I tried it except I boiled the marg, milk and cocoa on the stove a minute then added the sugar. Think I boiled it a sec or two too long though, it set up really fast.

DH really liked it but I just can't get used to the taste of chocolate fudge lol I know I'm weird.

I'm a soft peanut butter fudge gal, you know the kind you make with Fluffo. I also like homemade brown sugar fudge but that's a special treat that I only make for Hallowe'en.

I like peanut butter flavored and regular fudge.. I have to say the regular is my favorite... Nothing beats that smooth chocolatety taste.. YUM!

Fluffo is a bottle of pre-melted marshmellows, it's yummy.

Peanut Butter Fudge
..................
Take 2 cups white sugar
1/2 cup margarine or butter
1/2 cup milk

Boil on medium heat 8 to 10 minutes, remove and stir in 1 cup smooth peanut butter and a small bottle of Fluffo. Spread in pan, cool and cut.

It makes a soft yummy fudge.

sounds like marshmallow cream here. but that's a good peanut butter fudge, what about the brown sugar fudge?

Brown sugar fudge

1 kg bag of brown sugar
2 cups white sugar
1 can evaporated milk
1/3 cup margarine.

Heat to melt then boil and cook until it spins a thread(confusing unless you made fudge before-I never timed it)

Remove and stir a few minutes to cool, add 1 cup chopped peanuts, stir until you see it start to thicken(few minutes). Pour in large greased cookie sheet pan. Score after 10 minutes, cool and braek.

i've measured candy heat that way, but how many cups is in a 1 kg bag of brown sugar? we can't get kg bags, they are pounds here. i know the conversion is 2.2 pounds, but how many cups is that?

Same problem I had with my New Zealand cookbooks. Their cup measurements are the same but the bulk stuff isn't. Two one pound boxes plus a bit (maybe half cup?) should do it, Jiffy. And most of our things also have metric measurements on the packages.
