I have a large Rhubarb plant, but the stalks never get red. Are they safe to use green? Why do they never get red?

You might just have a green variety. My grandparents grow both. The green seem to grow better but the red is sweeter.

It is safe to eat, it is the leaves that are poisonous.

I think their green variety is called "Riverside", and their red is "Macdonald", forgot to tell you that you can also get pink varieties as well.

Do you know what variety you have? Sometimes soil can play a part in losing it's colour as well.

The card that came with the bulbs says "Victoria". The stalks are pictured as RED.
I guess I'll try to cook the green stalks and see how they come out. I am 77 yrs old and take care of my wife who has Alzheimer's and it's hard to find things to cook. Anybody have a good recipe? Thanks for your help. Don - Price, Utah

Don, your soil might be getting no nutrients to your plant anymore. In the spring add some compost or manure to it around the plant.

What exact kind of recipes are you looking for?

I grow Rhubarb, in spring I usually give it a good feed with pelleted manure. It gets better with age too, throwing up more stems each year. The green one is good in jams, but Ive used it it pies and crumbles too. It tends to need a little more sugar to sweeten it.

I used to make pie with ours and add raisans to make it sweeter.. Quite tangy for sure .............

NOw it died.
