... in the black garbage cans I bought for composting our kitchen scraps? I know there have to be some on the side & the bottom, but I don't know how big is big enough. I don't want giant bits & pieces falling out each time I roll it. I know there will be some stuff that falls out of the holes, but... not *a lot*.

Oh... & how often should there be a hole? How many for every square foot of garbage can surface? Every ___ inches around?

Small holes. the microbes that break down the soil need air. 1/4 inch is plenty big. How big is the can? 10 gal 20, 40??? I would mentally divide the can in 1/8ths around, and in 1/4s top to bottom and put a hole or 2 in each grid.
