Hi guys. My Gran used to take lemons and cut them into fours only leaving the stem end together. Then she would stuff the lemons with salt and put them in jars for upto a month. I loved em when I was a kid since you rinse the salt off before you eat em. the salt preserves the lemons. I do have a question about that though. Since its not heat sealed in a home canner wouldn't bad things grow? Just curious because none of us every got sick off em.
the acid from the lemon and the salt are the preservatives. if you check out most anything packaged, you will see the two main preservatives are sodium and citric acid.
Hey cool deal. I kinda thought it would be fine but you never know. Its only been a few years since many discoveries have been made about food handling etc.. Figured I would ask and be safe rather than sorry. :)
