Today I was thinking about all the holiday leftovers and realizing that once again we will soon be slammed with Christmas leftovers! Yikes! Some years I'm not finished using up all the Thanksgiving things before it is time to Cook Big again!
I read in CH tonight that Nana makes turkey enchilladas (sp?). That was a totally new idea for me because I only had an enchillada one time in my life when I was in California many years ago and I've certainly never cooked any!
So now I'm wondering... what do you all do with your festive leftovers?

We eat our leftovers. We'll have turkey or ham sandwiches and sometimes I make soup. Sometimes we have lasagna for Christmas and what we don't eat I send home with people. I never freeze anything.

Quiches' , ham salad,,,,, Left over sweet potatoes, ..... SP Bread,, Muffins,, Pancakes,, even cookies, Turkey Hot Brown recipe Ingredients: * 8 slices sandwich bread, toasted * 3/4 pounds sliced turkey * 2 cans (10.5 oz each) condensed cream of mushroom soup * 1/2 cup water * 1/2 cup shredded mild cheddar cheese * 8 slices bacon, partially cooked Preparation: Cut 4 toast slices into halves diagonally. For each sandwich, place 1 whole toast slice with 2 halves on each side, on baking dish or individual ovenware plate. Lay sliced turkey over toast. In a saucepan combine soup and water; heat until smooth. Spoon sauce over turkey; sprinkle cheese over the sauce. Place 2 bacon slices on each sandwich. Put sandwiches under broiler until cheese is melted; serve hot. Makes 4 hot brown special sandwiches.

Diane how do you do your turkey alfredo fettucini? My sister makes a kick butt turkey tetrazini.

Oh Merme I take the short cuts  ,,,, get a package if fettuccine noodles and boil,, buy a jar of alfredo sauce,, heat up the sauce, cut bite size turkey up in it,, pour it over the cooked noodles( in a baking dish,,, and grate fresh Parmesan cheese over it, put in the a 350 degree oven for about 15 minutes,, ta daaaaaaa,, Done and ready to eat,  Quick and Easy  do the same with left over baked/roasted chicken too,

Diane how do you do your turkey alfredo fettucini? Merme I sometimes use the 'tuna helper' (like hamburger helper) fettucini. quick and easy, and it doesn't taste half bad. last year I made a wonderful dish with some leftover ham. I'll have to dig it out. it seems like it was some kind of gumbo stew?

At my hose all the leftovers are usually gone by noon the next day.Ther is usually no turkey left over.

It was just the two of us this year with a 14lb. bird. We ate leftovers (turkey chili, sandwiches), pulled the meat off & froze what was left. BUT THEN...
DH took the carcass and made turkey stock. (House smelled so good on Friday, and that big ol' pot just simmering away upped the humidity in the house-- a very good thing.) He put the pot in one of the "downstairs" fridges over night. We skimmed it yesterday, and then packaged up the stock in freezer bags. Two quarts were frozen specifically to use in gumbo that he'll make in a couple of weeks when some old friends visit. The rest we put up in quart bags, 2 cups/bag. He'll use that over the next few months in soups, stews, casseroles, etc.
All told we froze 2qts + 6 bags (12 cups). Not bad!

that's awesome, marica! we didn't get the chance to do anything with our turkey carcass this year. one of my labs robbed it right from the countertop when no one was looking. she ate up everything except the bag it was cooked in! even the celery and onions that were cooked up inside! ha ha.

I really like the idea of making a soup out of the leftovers. I hate to throw stuff away so I usually try to eat/reuse all of the leftovers from thanksgiving or christmas...

Jessie, how do you make your soup? We love soup in this house but I have tasted very few turkey soups I thought were good. Any advice?
