Tonight I tried one of Ginger's recipes. She fixed it for me and I loved it. Had to buy a food processor to make this stuff.
Roasted Red Pepper Pasta to which I added chicken because if there's no meat Johnny thinks he hasn't eaten.
Johnny walked in said "ewww. What is that? It looks like sewage." He ate a few bites and said he was getting cereal. So he had cheerios and I ate ALL the pasta cuz it's good.

What didn't he like about it? Is he just not a pasta eater? I could eat pasta every day if it wouldn't make me incredibly fat!

I asked him that over and over but he just didn't like it. I thought it was yummy and ate til I was sick. No accounting for taste.

Diced potatoes fried with tiny bits of sausage (a patty I cut up) and eggs. Toast. YUMMY!

Last night we had spaghetti and garlic bread with a lettuce salad. Tonight we go to have dinner at James' brother's house. It is the last night their family from Louisiana is in town so we are all having dinner together. I believe they are keeping it simple tonight....hamburgers, hot dogs, potato salad, etc. I am bringing a veggie tray. Most of James' sister's do not work in the summer because they work at the school. I figure they can make the time consuming stuff since they are home all day and I am at work. Really though, I don't have time to make anything before tonight. Last night I cut up all my veggies and am calling that good!

I agree totally with your decision on that one Jess.
Yesterday at a meeting I asked a lady what she was having or dinner and she said tuna fish. It's been years since I had a tuna sandwich so I stopped on the way home, bought a can, added dill pickles, boiled eggs, mayo, tomatoes and put it all on squishy, no nutrition white bread and it was GREAT. May eat it again tonight.

We had broiled filet of sole fish with baked beans and brocoli. Also made homemade tartar sauce to dip the fish in - yummy!
Tonight will be fend for yourself for Brian and me since Don and Amy won't be home.

Last night we had a variety of foods....a potluck with the family. Burgers, corn on the cob, salads, cheesy potatoes and the list goes on and on. We had a black eyed pea salad (I don't know what else you would call it) that was fantastic! I had never had black eyed peas before. They are not really something that we eat up here. It was good though. They told me the recipe and it is so easy too which is a bonus!
Not sure what we are having tonight....guess I better start thinking about that. Anyone have any great ideas??

I just picked up some focaccia bread rounds. I will take one of those and fill it with dry salame, chicken, provalone and some veggies and lettuce and dressing, wrap it tight and put it in the fridge weighted for a flat tasty sandwich cut into serving sized wedges. I am so into grab and eat type foods and cold to offset the heat.

I had planned on fish, homemade pinto beans, salad, and cornbread. I got tired, so we just had fish and salad. the beans aren't even ready yet...another half hour. so tomorrow we will have the beans and cornbread with some roast!

he had bought some sliced chicken at the deli and put that on his. He does indeed always have to have meat or he doesn't feel like he's eaten.

Went to the farmer's market. I got baby reds, sweet corn and cucumbers. I think I will make cucumber salad, baby reds, sweet corn and maybe pork tenderloin. Will have to see what meat looks good when I stop at the store.

Diane, that wrap sounds good - if you make it for me. And Jes you're tenderloin and veges sound great. I'm not cooking. It's too hot and I want to take a nap. Johnny said he thought about making spaghetti but it's too hot for spaghetti.

Jessica, I ate that tuna for lunch and dinner for 2 days. It was great. I mentioned what I was eating to one of my sisters when she called and she said "hmmmm, tuna. Let me see if I have a can. Haven't had it in months." And she did and ate it too.
I ended up not eating last night but I fixed Johnny hot dogs, green beans and a salad.
Tonight I'm having a salad from our garden. He's on his own.
