Our lasagna, salad, and Texas Toast was very good. So what's on your plate tonight?

Well we finally had the taco crunch tonight.
Then we had warm Apple pie & ice cream for dessert.

oh that sounds so good, much better than the ravioli I had.

Shepherd's Pie

Maxi had left over mashed potatoes and fried eggs. I had rice.

we got to the Fire departments cook out late--no bake sale food left & only bratworst sandwiches were left for supper.

it is a good thing I had corn chips & apple pie at home.

Rice with chicken broth.

Rod grilled us each a pork chop & baked us a potato.

I cleaned out my fridges. I ate all of the leftovers.

We had glazed ham with the fixings, lobster and DD's birthday cake.

Spaghetti made of angel hair pasta & a thick sauce w/ chunky vegetables & browned ground beef. Garlic toast.

Chicken, chicken and more chicken Yup, cleaning out the deep freezer.

Steak, mashed potatoes and string beans.

hamburgers, left over noodle.brocolli casserole & corn was for last night. I will have to rummage thru the freezer for tonight's fare...

Pork chops with roasted potatoes, carrots, celery and onion.

And on the side, just to not waste it, some sauteed eggplant & tomatoes sprinkled w/ parmesean cheese.

We had breakfast steaks, fried potaotes, garden tomatoes (YUM) & corn.

I am completely at a loss as to what to make tonight! So, I will go to the grocery & just look around and hope to be inspired....

Well since we have a weeks worth of chicken to use up. Yesterday I made a chicken soup, today will be a chicken stew

What about chicken salad? Chicken alfredo? Or those Mexican things Nana makes... enchilladas or something like that?

Another day maybe..right now I need 'one pot' dishes so I can get outdoor chores done.

I'm thinking of chicken fried rice, chicken balls, and a stir fry for tomorrow. I need to get the freezer empty so I can defrost and restock soon.

Hamburger-Greenbean casserole

You know the one with tomato soup and mashed potatoes on top??

I u sed 8 oz of tomato sauce insted & I did not put the mashed potatoes on top, but served them on the side. WE had that all the time at home when I was a kid.
ost the recipes now say to add shredded cheese but mom did not so I do not either.

Please post that recipe, Carol Jean. It sounds YUMMY!

Hamburger-Green Bean Casserole

1 can French styled Green beans, drained
1 can Tomato Soup
1 lb. Hamburger, browned & drained.
Mashed potatoes (instant or homemade)
1 egg
1 (4 oz) pkg Cheddar Cheese

Brown Hamburger and drain off excess fat. Add green beans and tomato soup to meat and mix together. Put into a greased 2 qt casserole. Set aside. Mix the egg into the mashed potaotes.

Place mashed potatoes on top of the green bean casserole and then sprinkle the shredded cheese on top.
(mom put the potatoes around the edge of the casserole so there was an uncoverd place in the middle of the casserole.)
Bake at 350*F for 20-25 minutes or until heated thru.

You can (& I think should) add the cheese the last 10 minutes of the baking time, so it has just enough time to melt & will not burn.

Here is what I really did:
I added about 1/2 cup chopped onion to the meat when browning & seasoned meat to taste.
-I had regular cut green beans so I used them and chopped them into shorter pieces with a fork.
I used an 8 oz can of tomato sauce instead of the soup.
I looked at a recipe that said to use 8-10 oz of Ragu so I think next time I will buy an 8 oz can of sauce with oregano and garlic added instead of the plain.

I would not use instant potatoes next time. The flavor & texture is not as good as homemade. Also I would use a bit less milk when mashing the real potatoes so when the egg is added the potatoes will not become saucy. They need to be sorta thick, so they stand up to be the topping on the rest of the casserole.

I left out the cheese but an idea would be to use the oregano flavored sauce and then add shredded Mozzarella either on top towards the end or possibly mix it in with the beans & sauce.

I dont blame you at all--Often is the time I would not cook if it were just me.

Pancakes, ham circles, & cherry tomatoes were on the menu here tonight.

Tonight is steak, spaghetti squash, and a homemade recipe using couscous I buy in bulk. I may toss some ears of corn into a pot as well....

Tonight was Chuck steak cut into strips, mashed potatoes,
& a zucchini/mushroom/onion/chicken flavoring saute.

Last night we had rice w/ hamburger & peas, all mixted together.

Not sure what will be for tonight.... maybe kielbasa.

Going to have bratworst patties, mashed potatoes, some veggie or another & fried apples (??)
My mom swears they are good--let's hope DH thinks so..

Homemade cheesesteaks.

I'm roasting a whole chicken and using a Creole cracker stuffing in it. We'll have mashed potatoes & green beans to go with.

WE had chef salads & crackers for supper tonight.

Leftover chicken, potatoes & carrots.

Chicken which isn't such a bad thing now since I am not allowed any red meat for two weeks. So the 'freezer clean-out' is working out fine

Baked potatoes, meatloaf & peas and probably applesauce too

Tonight we had fried catfish, french fried & California Medley

Tonight I am going to make stir fry & cut up a thin steak I have for it.

I know I said chili sounded like a good plan for tonights dinner but I think both DH & I could benefit f rom a chciken soup. If I make it thick enough with veggies & such he will not even notice.

I hope I have chicken in the freezer--I would hate to take the time to go to the store--oh well---we do what we must, huh???

Thick hearty chicken stew today...heals all that ails in this cold weather.

Tonight is home made spagetti. Husbands grandfathers recipe straight from Italy :ding: then canned by ME!

Last night we had Salmon Pie and bowls of clam chowder. It suited us well.

You know Merme, I have never eaten salmon pie.

Tonight will be roast beef for DH and chicken for me.

Bringing this back up because it's one of my favorite topics.

We are having oven baked french fries and oven baked chicken. I will add some frozen veggie with that.

Last night we couldn't decide and didn't feel like cooking so we each had a couple pieces of pie that we left in the fridge.

Maybe not the healthiest option but it certainly was tasty

Tonight I think I will do something with ground deer.--I have not decided what yet--perhaps some casserole of some sort. ???

You could always turn it into meat loaf or a pasta sauce.

I ended up making Chili with this pound of meat---DH was so pleased--

not that he was getting Chili--he actually thought it was canned chili---he asked me the brand & when I said gee it is carol's "from scratch" brand he was so pleased--- (I am guessing pleased that I made it & did not just open a can????)

I think tomorow night I am going to thin the lsft overs with tomato sauce & then add spaghetti to it--
My mom did this wjhen I was a kid & called it "chili mac". It was more like soup. We shall see waht I really end up doing.....

I love chili mac and make it often (with canned chili). topped with cheese it is a satisfying dish. Mine is not so soupy though.

I bet yours is like that that Steak & shake makes??/

Ok so on todays menu---is the chili mac--and sicne there is so much left I will just add teh pasta & not any more "broth". so it will be a thicker Chili mac----gee Iam hungry already

perhaps I will make DH some corn muffins to go with it....

By the time evening comes around in summer, I am not always hungry for something hot. But our weather is to be cooling this week. I'm thinking a mess of meatballs; some to be made into subs, some for sweet and sour meatballs with stir fry veggies on rice and some for sauce with pasta. One basic thing and multiple meals to feed lots of people.

A cooking show was making meatballs today & now you---I feel the need to make some meatballs now.
As tomorow's meals have been firgured out already--salads with meat on them--
So I guess meatballs are on the agenda for Wednesday--thanks so much---now if I could only figure out the rest of the week.....

I am not going to have meatball meals all week. Most will be frozen for meals the next couple of weeks. I like to cook but not necessarily every day. Having things to take from the freezer and add sides is very good. And I share with others.

Sounds yummy...I haven't made meatballs in a bit. Might be a plan for next week

Today will be pork chops and veggies on the bbq..don't get many dry days so I will take advantage when I can.

Tonight will be egg rolls. Up to my elbows in chopped veggies, shredded chicken and wrappers. Some to eat now and some for the freezer. It is a treat I don't do often.

I am thawing some burger now--so I guess meatballs it is---that & mashed potatoes it is tonight--Garden tomatoes on the side--

Tonight's dinner is in the crockpot. I layered chopped yellow onions followed by 3# of beef tossed with dried onions and flour. Next was a layer of green peppers and small whole white onions. New potatoes and carrots and celery on top of that, about 3 more pounds. I put a thick layer of mushrooms on top and added water. When that cooks down a bit I will add more 'shrooms and some green onions. Can you tell we like onions around here?
Stew for dinner and a couple other dinners as well.

Mmm, sounds yummy.

Today will be cheeseburgers and cold salads..I am craving burgers.

Chicken fajita's here tonight,, with seven layer Mexican bean salad.. and enough left over for tomorrow's dinner,

Ton ight I am serving some thin Rib-eye steaks---and a banana-cream sour cream dessert---but I have nop idea what type of potato or veggie to go with---

Tonight one of us had Mac Donald's and some of us had take-out Mexican food. I did not want to dirty up my clean stove. It was an early meal so if anyone is starving later I have bunches of easy things, like yogurts and fruit and deviled eggs. A few leftovers in the fridge too.
